Rice Pudding

Recipe By: Everyday Food

I’m thinking about trying adding some sweetened condensed milk to this recipe.

Ingredients:

1 cup Arborio rice
1/2 cup sugar
1/4 teaspoon coarse salt
4 3/4 cups whole milk, divided
1 1/2 teaspoons pure vanilla extract
1/4 cup heavy cream
Ground cinnamon, for serving

Directions:

In a large saucepan, bring rice, sugar, salt, and 4 1/2 cups milk to a boil over medium-high. Reduce heat, cover, and simmer 25 minutes. Uncover and cook, stirring constantly, until rice is tender and pudding is creamy, 5 minutes. Stir in vanilla and remaining 1/4 cup milk.

Transfer to a serving dish and press plastic wrap directly on surface to prevent a skin from forming. Refrigerate until chilled, at least 1 hour (or up to 3 days). To serve, stir in heavy cream and sprinkle with cinnamon.

This is from my group or a group I am in. It was posted by Terry P. another member. After she took it off the heat for the last time she added 1/4 C sweetened canned milk.

The ones you love can hurt  you the most. Recently a friend hurt my feelings. It’s OK, it happens. I can’t make her see it my way and I can’t see it her way. So it’s hurts and it will stick with me. Also I found what she did rude.

The kids got a box of shoes and clothes from their Grammy, the boys went nuts with their shoes. George and Michael-John said the shoes are the best “skate shoes” made!  Maria is already wearing one oh her shirts.

I saw a bit of the sunset this evening it was lovely.

My last day of work will be Halloween Day. My first day off since being in the hospital in April will be November 1st. I am so excited.  I have bulbs and seeds to plant. A house to clean from top to bottom and then paint. Taki will be helping sometime in November. He is keeping the shop open to see how it goes.

I like watching people or people watching. On the way to work this afternoon. M-J and I stopped in Fira to get a souvlaki or gyro with pita. I enjoyed watching the people while we waited for our food. If we had left earlier I would have eaten there so I could continue to “people watch”.

Another hot sunny day with early clouds that burned away.

I left the store just before 10 am. I went to Virginia’s house for the weekly Bible study. Just before I got there the electricity was turned off. Oh well. It was a bright day and her house had plenty of light. She was upset because she couldn’t serve us coffee or warm food. She is so sensitive. God Bless Her. Vanessa, Helen and just at the end Joan came. We didn’t do much studying today. We mostly prayed. I felt a weight lift off my shoulders. I didn’t know I was carrying anything there. Praise the Lord.

It is cold inside the shop because of the open fridges. My toes always get cold. I am wearing leather athletic shoes with thick socks. I get up and walk around and still they remain cold. They get warm after a little while in bed. lol We still have customers and they are all lovely people. A few of them are disappointed that we are closing at the end of the month. They say they don’t like the other shop at all. It is wonderful to still have customers but I am so worn out. All of the folks coming in are so lovely. That in itself is making it easier to be here. I just want to sleep for awhile, then re-open. 😛 We won’t open up again until March.

There is a young couple outside arguing. 😦 He was just in to buy cigarettes. I hope they work it out. How bad is it to be on holiday and arguing?

Michael-John came up with Taki so I am sitting here so he can use the internet. I wanted to go home early and to bed. Oh well. What good is it to have a laptop if you can’t get online with it. I stayed to help my little one. Both my guy’s are next door eating. I haven’t seen George the last few days except to wake him up for school as I was leaving with Taki to go to work. He called earlier to tell me not to worry. He went from school to “the ramp” for skating. I talked with Maria too. She and Yannis are thinking to go to Germany where they know some people and Taki knows some. They have been promised jobs there. Yannis has papers from Albania so he can only stay 3 months. It will good for them to go and work and learn the language and about Germany. I hope they go.

Vanessa cooked lunch for us and today Virginia offered to clean the house. The house is a wreck. Nothing has been done except laundry and dishes for months. I just can’t bring myself to let her come over. Taki and I will start working on it after we close. We will also get the garden in better shape. It will be so good to be there and getting things done. I am going to buy an MP 3 player to help me get on a schedule of walking. I also want a digital camera any suggestions on brands?

Do any of you have them? Have any of you ever had even one? Do you know anything about them? I have been having them. I am praying about it. Add me to your prayers for them to stop.

It is beautiful here today. Hot and sunny with no clouds or wind. 

Vanessa made lunch for us today. She is half Italian so when she said she was making us pasta, yum! (My stomach is still a mess from last nights anxiety attack. I also had a serious hot flash going on. WOW! My face was red enough and hot enough to be on fire. Poor Michael-John was worried. I told him it will pass soon. I just have to try and rest.) So I ended up eating a small bit of her potato salad. It has olive oil and spices only. Light and easy on the stomach.

Michael-John has a cracked bone in his elbow. He is adjusting to it just fine. He hasn’t needed any help in dressing and bathing. I helped him with his first shower but ended up only doing his hair. It was like having a toddler again. lol He has English class tonight. I will pick him and his friend up there. We will drip his friend off in our neighborhood and then go to Galatea’s. If I don’t take him with me he will be home alone again or at Maria’s.

I am going outside to stand in the last rays of today’s beautiful sun.

It’s gray and cold. Yesterday the sun was bright and hot and beautiful. Today is just cold and gray. (18c) We have had about half the amount of customers in the last three days. We will close the shop up at the end of the month. I am so happy about that. We will put a discount on almost everything in the store to sell it. That way it’s easier to get started next year. That will also give us a bit extra for the Winter. 😉

 

Michael-John has a cast on his left arm. He cracked a bone in his elbow. He was doing par kour with friends but fell wrong. It will be on for a 12 days and then we’ll see. It cost 150 Euros ($202.50) and the Dr. said that is should be 240 Euros ($324.00). Maria worked for him at one time so I guess that is why he gave us the good deal.

 

Maria continues to work 9:30 until 18:30 everyday. Yannis was laid off about a month ago for the Winter season. He is at home now. I don’t know how they will survive the Winter. Pray about it. She is tired and doesn’t eat or sleep right. So her stomach is giving her hell. 

 

I hardly see George. He is asleep when we get home or he isn’t home and comes after we go to sleep. He is asleep when we leave in the mornings. lol

 

We have had a better season than last year. I am looking forward to this Winter compared to last year. It was wonderful to be with Taki so much last year but the lack of money was hard. I prayed and the Lord provided us with enough. What more could we ask for. This year I will get unemployment and Taki might get his. We will be OK. Also last year I was worried about being with Taki 24 hours a day for months. It was an amazing time for us. It was like we re-bonded with each other. Maybe we fell in love allover again. It sure felt and feels good to be closer to him.
